Time to bake a cake
It's Birthday time in my family and I have been trying to make the perfect cake. This recipe was particularly successful, so I thought I would share it...
I mixed a few ideas together to see if I could get the best possible results and it seemed to work- if there are any lovers of coffee and walnut cake out there, you are in for a treat. Finish off with some of Lazy Sundays tea party decorations and as Gordon Ramsay would say...cake done!

Pre-heat oven to 180 degrees Centigrade. Grease two 18cm cake tins and line with greaseproof paper.
For the Cake:
250g butter (room temp)
250g caster sugar
4 medium eggs, beaten
250g self raising flour
1tbsp espresso- strength coffee (instant fine, just add bit more)
For the drizzle:
1 level teaspoon instant coffee
50g demerara sugar
For the icing:
200g butter
400g icing sugar
3-4 tbsp espresso-strength coffee (depending on how strong you like it)
Walnut halves to decorate.
1.Heat oven 180 degrees C.(gas mark 4)
2.Beat Butter and sugar with electric mixer for about 5mins (the longer the better)
3.Alternately add eggs and a spoonful of sifted flour to stop potential curdling, mixing well after each addition. Add rest of flour and fold with large metal spoon. Stir in coffee.
4.Pour mixture into tins and smooth top. Bake for around 40mins testing with a skewer when you think it's done.
5. Next make the syrup: Place coffee and sugar into heatproof jug then add 55ml boiling water and stir briskly until dissolved (about 1 min) Pierce surface of cakes (not whole way through) and pour over the drizzle.
6. When cakes have cooled slightly turn out onto wire rack.
7.Finally the icing...Melt the butter and add the icing sugar and coffee, mix with hand whisk until smooth. When cakes are cool, spread icing onto middle and wedge together, then add remainder of icing to the top, dot walnut halves all over surface and ENJOY, YUM!
